Mother of Roland and T.D., Miss Ollie Dickey was known for her sweet southern charm and delicious sun tea made right on her front porch. Nothing tasted more refreshing on those hot southern days! We continue the tradition by proudly serving her signature tea recipe at all locations. It still hits the spot served alongside our mouthwatering barbecue entrees.
Generally, sweet tea is prepared by brewing black tea and adding sugar or a sweetener while the water is still hot. It is allowed to cool and then served chilled. Sometimes flavors such as raspberry, lemon or mint are added. Sun tea is brewed by leaving loose tea bags in water in a jar or pitcher placed in a sunny area for several hours.
Texans have a claim to sweet tea since the oldest known recipe for sweet iced tea was published in 1879 in a community cookbook called Housekeeping in Old Virginia by Marion Cabell Tyree, who was born in Texas!
Another interesting tidbit: Did you know most Americans largely drank green tea before WWII? Due to anti-Japanese sentiment Americans emerged from the war drinking black tea originating from British-controlled India.
