One of the first foods that can be a sure sign that spring is on the way is asparagus. You know it won’t be long until spring is here whenever you see this seasonal veggie begin to pop up at your local grocery stores and farmers markets. Spring is full of new beginnings, so why not begin eating right? Here is why you should be eating more asparagus:

Asparagus is loaded with nutrients. Asparagus is a great source of fiber, folate, Vitamin A, C, E and K.

2. Glutathione
Asparagus is a herbaceous plant just like avocados, kale, and brussel sprouts. This means that it is a very rich source of glutathione, a detoxifying compound that breaks down carcinogens and other things that can harm your body such as free radicals. For this reason, eating asparagus may help protect one from certain forms of cancer.

3. Antioxidants
Asparagus is packed with antioxidants, ranking among the top fruits and vegetables for its ability to neutralize cell-damaging free radicals. This, according to preliminary research, may help slow the aging process.

4. Folate
Yet another anti-aging property of this spring veggie is that it can help our brains to fight cognitive decline. Similar to leafy greens, asparagus contains folate, which works with vitamin B12, found in fish, poultry, meat and dairy to help prevent cognitive impairment.
