We love a good barbecue sauce. In fact, our business is built around excellent quality from our sauces to our premium barbecue meats. That being said, everyone has a favorite type of sauce and this well-loved condiment can vary from region to region.
Since Texas style barbecue is generally dry rubbed and cooked slow, the sauce doesn’t come into the picture until eating time when it is served on the side. It is thinner and spicier so it can penetrate the meat. Recipes can vary including differing amounts of hot peppers, chili powder, cumin and sometimes even coffee!
Kansas City style sauce is tomato-based with molasses, sugar and vinegar as main ingredients. It is known for being extra thick and spicy with sweet undertones. Most of the barbecue sauces lining the shelves in the store are patterned after this style of sauce.
North Carolina style sauce is thin and bold without very much, if any at all, sugar added. The meat is chopped and served wet with a liberal amount of sauce.
South Carolina style sauce deviates from more traditional tomato-based sauces as it is mustard based and pairs well with the meat of choice in that region which is pork. Most sauce in this region is strictly yellow mustard-based with varying ingredients added such as vinegar, sugar, spices, lemon juice and butter. Sometimes honey or syrup is added as a thickener and a sweetener.
