You don’t mess with Texas, and you certainly don’t mess with Texas style barbecue. Texas and barbecue go hand and hand, and there isn’t much else
that’s more American in nature. Out of all of the different variations of barbecue, Texas style is undeniably the best, but what makes it so?
1) Roots.
Authentic Texas barbecue is rooted in a few different groups: European immigrants, freed slaves and Mexicans. In the 19th century, Czechs, Germans and Hungarians immigrated to Texas, bringing their knowledge of making sausages and smoking meats with them, both common techniques back home. Different techniques from varying groups fused together to create the Texas style barbecue that we know and love.
2) Seasonings.
In Texas, it’s all about the meat and little is done to mask it with seasonings. Light seasonings or lack there of place all of the importance on the meat and the sauce.
3) The sides.
The sides make all the difference. Unlike barbecue from other regions, Texas style barbecue is often served with jalapeños, lots of white bread, cheese, onions, and pickles. These simple sides aide in placing all of the emphasis on the meat.
